Ingredients
- ♡ ½ cup self raising plain flour
- ♡ ½ cup self raising wholemeal flour
- ♡ 2/3 cup milk
- ♡ 1 egg
- ♡ 2 zucchini – grated
- ♡ 1 Tbls butter + extra
- ♡ Cucumber yogurt to serve
Instructions
- ♥ Add the flours, milk and egg in a jug and using a bar mix blend until combined. It should be a very thick batter.
- ♥ Put the Zucchini into a mixing bowl and pour the batter over the zucchini, mix with a spatula until just combined.
- ♥ Heat the butting in a large non stick fry pan and using a paper towel grease the surface of the pan.
- ♥ Adjust the heat to medium and spoon tablespoon full of the mixture on to the pan, cook until bubbles start to form then flip.
- ♥ Serve pikelets with cucumber yogurt – enjoy!
