
Ingredients
- ♡ 2 Tbls Extra Virgin Olive Oil
- ♡ 2 Cloves Garlic – Crush
- ♡ 1 Can (800g) Tomatoes - Chopped
- ♡ 1 Tsp Dried Oregano
- ♡ 6-8 Basil Leaves - Washed
- ♡ 3 Medium-Large Zucchini - Sliced Length Way
- ♡ 125g Mozzarella Cheese - Grated
- ♡ ¼ Cup Parmesan Cheese – Grated
- ♡ Grated Parmesan Cheese -Extra
Instructions
- ♥ Heat oil in a sauce pan, add garlic and stir fry until aromatic. Add canned tomatoes and oregano. Reduce heat and simmer for 10 -15 minutes. Add basil season to taste and simmer for a further 5minutes.
- ♥ Preheat oven to 180 degrees Celsius
- ♥ In a baking dish, (20x30) add a ladle of sauce then start layering the zucchini slices, ladle sauce, ½ mozzarella cheese, and ½ parmesan cheese. Repeat for another layer.
- ♥ Top the third zucchini layer with tomato sauce and extra grated parmesan to your taste. Cover the dish with aluminum foil.
- ♥ Bake for 20-30 minutes or until zucchini is cooked through.
- ♥ Serve with a garden salad
