Ingredients
- ♡ 1 litre vegetable stock
- ♡ 2 Fresh Tomatoes - washed
- ♡ 2 Carrot – peel and chop
- ♡ 1 onion – chopped
- ♡ 1 celery stick - chopped
- ♡ 1 Swede – peel and chopped
- ♡ 2 sprigs of basil
- ♡ 2 Tbls extra virgin olive oil
Instructions
- ♥ Heat vegetable stock in a pot, add tomatoes and boil until the skin starts to peels away. Remove the tomato and remove the skin cut it up and return it to the pot.
- ♥ Add: carrot, onion, celery Swede and cook until tender.
- ♥ Add the basil and cook until wilted add oil, season to taste.
- ♥ Serve hot with crusty bread.
