Ingredients
- ♡ 400g Ricotta Cheese
- ♡ 2 Cups (120g) Baby Spinach Leaves – Washed and Finely Chopped
- ♡ 2 Eggs – Lightly Beaten
- ♡ Salt And Pepper - To Taste
- ♡ 375g Filo Pastry Sheets - We used Antoniou
- ♡ 1/4 Cup Olive Oil
Instructions
- ♥ Preheat oven to 180 degrees Celsius.
- ♥ Mix the ricotta cheese, chopped spinach, eggs, salt and pepper in a bowl.
- ♥ Lay a filo sheet on a work surface, tri fold it long, then place a spoonful of the spinach and cheese mixture at one end and fold into a triangle.
- ♥ Put the triangle on a baking dish and brush both sides with olive oil.
- ♥ Continue with the remaining mixture.
- ♥ Bake for 20 minutes or until golden
- ♥ Alternatively before brushing with oil, you can freeze some for a later time.
