Ingredients
- ♡ 1 Cup White Long-Grain Rice
- ♡ 1 Tablespoon Olive Oil
- ♡ ½ Brown Onion – Finely Chopped
- ♡ 1 Cup Frozen Mixed Veggies
- ♡ 200g Red Kidney Beans - rinsed
- ♡ 1 ½ Tsp Vegetable Stock Powder Dissolved In ¼ Cup Water
Instructions
- ♥ Cook rice in a saucepan of boiling, salted water, following packet directions, until tender. Drain. Refresh under cold water. Drain and cool completely.
- ♥ Heat oil in a wok and add onion, stir fry until golden. Add mixed veggies , rice and dissolved stock stir fry until heated through and water has evaporated.
- ♥ Season with salt and pepper and enjoy!
