Ingredients
- ♡ 1 Tbsp Olive Oil
- ♡ 1 Onion - Finely Diced
- ♡ 500g Button Mushrooms - Cleaned and Sliced
- ♡ 1 Garlic Cloves - Crushed
- ♡ 1 ½ tsp Dijon Mustard
- ♡ 1 tsp Paprika
- ♡ 250ml Vegetable Stock,
- ♡ ¼ Cup Parsley – Chopped
- ♡ ½ Cup Sour Cream
Instructions
- ♥ Heat oil in a sauce pan add the onion and gently cook until soft translucent.
- ♥ Add mushrooms, then garlic cook gently for a 5–6 minutes, or until the mushrooms are tender and golden-brown.
- ♥ Add the mustard and paprika and mix well so that everything is coated. Add the stock, stirring as you pour it. Simmer gently for 5 minutes.
- ♥ Stir through parsley, and sour cream.
- ♥ Enjoy with rice, pasta and your favorite green veggies!
