Ingredients
- ♡ 1 Cup Pearl Couscous
- ♡ 2 Tablespoons Extra Virgin Olive Oil
- ♡ 1 Eggplant - Diced
- ♡ 1 Red Onion - Chopped
- ♡ 1 Clove Garlic - Crushed
- ♡ ¾ Teaspoon Cumin
- ♡ 1 Zucchini - Diced
- ♡ 1 Capsicum – Diced
- ♡ 1 Small Head Of Broccoli –Cut Into Flowerets
- Dressing
- ♡ Juice Of Half A Lime
- ♡ 2 Tablespoon Apple Cider Vinegar
- ♡ 1 Tablespoon Extra Virgin Olive Oil
- ♡ ½ Red Chilli - Finely Chopped (Optional)
Instructions
- ♥ Cook the couscous in a saucepan of boiling salted water for 5 mins or until just tender. Refresh under cold water until cool. Drain well.
- ♥ Heat oil in a wok, add, eggplant and onion stir-fry 1 minute. Add garlic and cumin and stir fry until aromatic
- ♥ Add zucchini, capsicum and broccoli stir-fry 1 minute. Add ¼ cup of water but the lid on the wok, reduce heat and steam for 2-3 minutes or until the water has evaporated.
- ♥ Dressing: Put all the ingredients in a jar and close with a lid, shake to combine.
- ♥ Serve couscous with the veggies and drizzle with dressing.
