Ingredients
- ♡ Chop Vegetables: 1 large onion, 2 stalks celery, 1 banana pepper
- ♡ 2 Tbls plain flour
- ♡ 4 fresh corn cobs, shucked
- ♡ 1 Litre vegetable stock (I used Massel brand)
- ♡ 2 med potatoes, chopped
- ♡ 2 Tbls chopped parsley
Instructions
- ♥ Heat 2 Tbls butter & 1 Tbls oil in a pan, add chopped Vegetables stir fry until soft.
- ♥ Add flour and cook for 1 min while stirring.
- ♥ Add corn stir. Add stock, bring to the boil.
- ♥ Add potatoes and simmer until potatoes are tender.
- ♥ Serve soup with chopped parsley
