Ingredients
- ♡ 1 Table Spoon Extra Virgin Olive Oil
- ♡ Onion - Chopped
- ♡ Carrot – Sliced Tick
- ♡ 2 Litres Vegetable Stock
- ♡ Cauliflower – Cut Into Florets
- ♡ Potato - Diced
- ♡ Long Squash – Diced
- ♡ Frozen Peas
- ♡ Fresh Parsley - Chopped
- ♡ Lemon Juice to Taste
Instructions
- ♥ Heat oil in a pan and add onions and carrots stir fry until onion is translucent.
- ♥ Add vegetable stock and bring to the boil. Add cauliflower, potato and squash. Cook for 20 minutes or until the vegetables are soft but still firm. Add Peas and heat through.
- ♥ Remove from heat, stir through parsley and lemon juice to taste.
- ♥ Enjoy!
