Ingredients
- ♡ 2 Tablespoons Extra Virgin Olive Oil
- ♡ 1 Cup Sliced Leeks (White Parts Only)
- ♡ 3 Cups Vegetable Stock
- ♡ 4 Cups Fresh Broccoli Florets - Chopping
- ♡ 1 Teaspoon Thyme – Stalk Removed
- ♡ 2 Tablespoons Sour Cream
Instructions
- ♥ In a large pot, heat the oil on medium heat, add leeks and stir fry until translucent.
- ♥ Pour the stock into the pot, bring to the boil and add the broccoli.
- ♥ Stir through the thyme and bring to a simmer and cook covered for 20 minutes or until tender. Remove from heat and let it cool.
- ♥ Stir through sour cream, and using a stick blender, process the broccoli mixture until smooth.
- ♥ Return the pot to the stove and heat through, season to taste. Serve hot and enjoy!
