Ingredients
- ♡ 1 Tablespoon Extra Virgin Olive Oil (EVOO)
- ♡ 1 Red Onion – Sliced
- ♡ 2 Carrots – Sliced
- ♡ 500g Head of Broccoli – Stem Removed Cut into Florets
- ♡ 2 Shallots – Sliced
- ♡ ½ Cup Frozen Peas
- ♡ 6 Free Range Eggs – Broken and Whisked
- ♡ 40g Cheddar Cheese – Grated
- ♡ 1 Teaspoon Ground Paprika
- ♡ Salt and Pepper To Taste
Instructions
- ♥ Preheat oven to 180 degrees Celsius.
- ♥ In a flame proof casserole dish (ours is 28cm) heat EVOO and add onions and carrots stir fry until onion is translucent. Add broccoli and ⅓ cup of water and continue to stir fry.
- ♥ Add shallots and peas stir fry for 1 minute. Turn off the heat and pour in your eggs, top with cheese and paprika.
- ♥ Place broccoli frittata casserole in the oven and bake for around 25-30 mins until the egg is firm all the way through. Remove from oven and serve.
- ♥ Enjoy hot or cold!
