Ingredients
- ♡ 1 quantity of the pizza dough (link in the notes)
- ♡ 1 Tbls Extra Virgin Olive Oil
- ♡ 1 onion - finely diced
- ♡ 1 red pepper or ½ red capsicum – finely diced
- ♡ ½ teaspoon oregano
- ♡ 1 can chopped tomatoes.
- ♡ 2 cups mozzarella cheese – grated
Instructions
- ♥ Preheat oven 220 ºC
- ♥ Divide the pizza dough into 4 portions and set aside.
- ♥ In a fry pan heat the oil and add the onion stir fry until it changes colour, add the red pepper and oregano stir fry.
- ♥ Add the chopped tomatoes, reduce heat and simmer for 5 minutes remove from heat divide into 4 portions
- ♥ In the mean time roll one portion of the dough into a rectangle, spread one portion of the tomato mixture to cover the rectangle.
- ♥ Top the cheese along the short side of the rectangle, then start rolling the pizza base starting with the short side.
- ♥ Use a sharp knife cut the log into 2 cm rounds and place the rounds in a baking tray lined with baking paper.
- ♥ Repeat the process 3 more times. Bake in the oven for about 15 minutes or until the scrolls are lightly brown.
- ♥ Serve with soup or as a delicious snack!
