Ingredients
- ♡ 2 teaspoon Extra Virgin olive oil
- ♡ Finely chop (1 large brown onion, 2 celery sticks, 1 large carrot)
- ♡ 2 garlic cloves, crushed
- ♡ Curry powder mix: ( ¾ Tablespoon ground garam masala, ½ teaspoon ground coriander, ¼ teaspoon chili powder, ¼ teaspoon ground cardamom, 1 teaspoon smoked paprika).
- ♡ 800g sweet potato, peeled, cut into 2cm pieces
- ♡ 400g can diced tomatoes
- ♡ 185ml can coconut milk
- ♡ 1/4 cup cashew nuts
Instructions
- ♥ Heat oil in a flame poof baking dish
- ♥ Add onion, celery and carrot and stir-fry until soft.
- ♥ Add garlic and curry powder sweet potato. stir until aromatic.
- ♥ Stir in tomatoes and coconut milk. Bring to the boil. Reduce heat to low.
- ♥ Simmer until sweet potato is just tender.
- ♥ Stir in the cashew nuts and cook few minutes to develop flavor.
- ♥ Serve with Basmati rice.
