Ingredients
- ♡ 400g finely shredded silverbeet leaves, 1 bunch
- ♡ 4 green shallots, chopped.
- ♡ Cheeses: mix 300g feta cheese with 150g ricotta cheese
- ♡ 3 eggs, lightly beaten
- ♡ ½ cup dry breadcrumbs
- ♡ 20 sheets fresh filo pastry
- ♡ 185ml butter, Melt & cool
- ♡ To serve: garden salad
Instructions
- ♥ Mix well in a bowl; cheeses, eggs, silverbeet, shallots, breadcrumbs, season to taste.
- ♥ Layer & stack 10 sheets of filo pastry with butter. Repeat with other 10 sheets.
- ♥ Place one pack of buttered sheets into a greased 22 x 30 oven dish. Add spinach mixture to the baking dish, top with the other pack of buttered sheets. Trim any overhanging pastry & tuck in the sides.
- Preheat oven 200ºC
- ♥ Bake pie 45 mins or until cooked through & lightly brown. If browning too quickly cover with foil.
- ♥ Serve with garden salad.
