Ingredients
- ♡ 1 ½ Cooked Quinoa
- ♡ 1 Tablespoon Extra Virgin Olive Oil
- ♡ 1 Onion - Chopped
- ♡ 1 Cup Coleslaw Salad
- ♡ 1 Zucchini - Grated
- ♡ 1 Carrot – Grated
- ♡ 1 Cup Frozen Peas and Corn Mix
- ♡ ½ Cup Fresh Parsley - Chopped
- ♡ 100g Feta - Crumbled
- ♡ 6 Eggs - Lightly Whisked
- ♡ 2 Tomatoes – Sliced
- ♡ Green Salad To Serve
Instructions
- ♥ Preheat the oven to 180°C Lightly grease a 20 x 30cm baking dish
- ♥ Heat oil in a large frying pan over medium heat and cook onion.
- ♥ Mix together, onion, coleslaw, zucchini , carrot, peas and corn mix, parsley and fetta.
- ♥ Pour into the baking dish, season with salt and pepper . Using a fork fold in the whisked eggs and flatten the surface with the back of a large spoon.
- ♥ Arrange the tomato sliced on the top. Bake for 45-50 minutes or until golden and cooked through. Set aside to cool slightly.
- ♥ Serve warm or at room temperature with a green salad.
