Ingredients
- ♡ 4 Medium potatoes, scrubbed and washed
- ♡ 2 Tbls Extra Virgin Olive Oil
- ♡ 1 ½ Cups chopped mixed vegetables of your choice, we used: onion, broccoli, carrots, beans, zucchini
- ♡ 1 Cup of grated cheese
- ♡ Serve with garden salad
Instructions
- ♥ Preheat oven to 180ºC
- ♥ Prick the skin of the washed potatoes with a fork, several times. Place in a bowl and microwave on high for 5-6 minutes.
- ♥ Meantime, heat the oil in a fry pan and stir fry the vegetables until the onion is translucent, remove from heat and set aside.
- ♥ Half the potatoes length way, and scoop out the middle, leaving a few millimetres of potato.
- ♥ Divide the cheese evenly among the 8 scooped halves, top with the stir fry vegetables and bake for 10-15 minutes.
- ♥ Serve with garden salad and enjoy!
