Ingredients
- ♡ 2 tspn extra virgin olive oil
- ♡ 150 g mushrooms – sliced
- ♡ 1 tspn butter
- ♡ 2 EGGS
- ♡ 2 Tblsp water
Instructions
- ♥ Heat oil in a non-stick fry pan and stir fry mushrooms until soft, remove from fry pan and set aside.
- ♥ Beat eggs, and water in small bowl until blended - season with salt and pepper.
- ♥ Return the frypan to heat add butter to coat the bottom, pour in egg mixture. Mixture should set immediately at edges.
- ♥ Using a spatula, gently pull the cooked portions from the edges toward the centre, so that uncooked eggs can reach the hot pan surface. Continue cooking, tilting pan and gently moving cooked portions as needed, leave to cook on low heat.
- ♥ When top surface of eggs thickened and there is no visible liquid egg remaining, place cooked mushrooms on one side of the omelette and fold the omelette in half with the spatula.
- ♥ Slide the omelette onto a plate and enjoy immediately!
