Ingredients
- ♡ 2 cups of dried brown lentils, soaked overnight (not necessary add 20 mins to the cooking time)
- ♡ 1 large onion, chopped
- ♡ 400g can chopped tomatoes
- ♡ 2 Tbls tomato paste
- ♡ 5 - 6 bay leaves
- ♡ ½ tsp cinnamon or to taste
Instructions
- ♥ Heat 2 Tbls oil and fry onion until soft,
- ♥ Add drained washed lentils, tomatoes, tomato paste, bay leaves, cinnamon, and 1 litre of water.
- ♥ Bring to boil, then simmer for 30- 40 minutes or until lentils are tender. Add more water if necessary. Season to taste.
- ♥ Serve with crusty multigrain bread
