Best made the night before. Can be frozen.
Ingredients
- ♡ 4 slices day old multigrain bread, we used the ends
- ♡ 1 brown onion, finely chopped
- ♡ 2 garlic cloves, crushed
- ♡ Spices (2 tsp ground cumin, 2 tsp turmeric)
- ♡ 2 x 400g can lentils, well drained
- ♡ 2 egg, beaten
- ♡ 3 Tbls plain flour
- ♡ Cooking oil for shallow frying
- ♡ To serve: Pita Bread, Salad & Hummus
Instructions
- ♥ Process bread in a food processor until breadcrumbs form.
- ♥ Heat 2 tbls oil in a frying. Add onion & cook until soft. Add garlic, cumin and turmeric, cook until aromatic.
- ♥ Add lentils, stir until dry about 1 minute.
- ♥ Transfer to a mixing bowl cool.
- ♥ Add egg and flour stir to combined.
- ♥ Divide into 8 portions and roll into patties.
- ♥ Refrigerate overnight.
- ♥ Heat oil in a non stick fry pan and cook patties, until golden.
- ♥ Serve with Pita Bread, Salad and Hummus
