Ingredients
- ♡ 3 cups (400g) chopped mushrooms
- ♡ 3 ½ cups (2 med) zucchini, grated
- ♡ 1 onion, chopped
- ♡ 2 garlic cloves, crushed,
- ♡ 1 tsp oregano
- ♡ 1 Tbls tomato paste
- ♡ 400g can tomatoes, chopped
- ♡ ½ tsp ground cinnamon.
- ♡ 400g can lentils, rinse & drain
- ♡ 250g wholemeal penne (par boil)
- ♡ cheese sauce (see recipe below)
- ♡ To Serve: Green Salad
Instructions
- Can be prepare night before.
- ♥ Heat 2 Tbls oil and fry onion until soft, stir in garlic, mushrooms and oregano. (Optional, add ¼ cup white wine.)
- ♥ Stir in zucchini, tomatoes and tomato paste, add cinnamon, bring to boil, reduce heat and simmer 20 mins, stir in lentils.
- ♥ Grease 20 x 30 baking dish, add par boiled wholemeal pasta top with lentil sauce, top with cheese sauce. Bake 200ºC for 30 minutes until golden and cooked through.
- ♥ Serve with Green Salad.

- Cheese Sauce: Heat 2 Tbls butter in a sauce pan, whisk in 2 Tbls flour, cook for 1 min, add 2 cups warm milk, whisk until think, stir in 1 cup grated cheese & season.
