Ingredients
- ♡ 1 cup wholemeal self-raising flour
- ♡ 1 cup white self-raising flour
- ♡ 1/2 tsp salt
- ♡ 60g butter, chopped
- ♡ 1 cup mashed sweet potato
- ♡ 3/4 cup milk, plus extra for brushing
- ♡ 1/4 cup fresh herbs (we used parsley and shallots) chopped
Instructions
- ♥ Preheat oven 200C. Combine flours and salt in a bowl.
- ♥ Rub butter into flour until mixture resembles fine breadcrumbs.
- ♥ Add mashed sweet potato, milk, herbs and using a butter knife, bring mixture together.
- ♥ Turn out dough onto lightly floured surface shape into a 20cm round. Put onto the tray.
- ♥ Brush top with a little extra milk. Using a sharp knife, score top of damper into 8 wedges.
- ♥ Bake for 30 minutes or until golden and hollow when tapped.
- ♥ Serve warm with butter
