Ingredients
- ♡ 2 eggplants sliced length way
- ♡ 2-3 tablespoon Extra Virgin Olive Oil
- ♡ Vegetable toppings of your choice. (we used sun dried tomatoes and pickled roasted capsicum)
Instructions
- ♥ With a pastry brush oil both sides of the eggplant.
- ♥ Using a sandwich press grill the eggplant slices, serve with vegetable topping of your choice.
