Ingredients
- ♡ 2 Large Eggplants (Aubergine)
- ♡ ½ Cup Extra Virgin Olive Oil
- ♡ 1 Cup Ricotta Cheese
- ♡ ¼ Cup Parsley – Finely Chopped
Instructions
- ♥ Slice the eggplant length way, about 4mm (thin) then brush both sides with oil and using a grill press grill the eggplant and set aside (You can even use a sandwich press!)
- ♥ Mix the Ricotta and parsley and season with salt and pepper.
- ♥ Spoon the ricotta mixture onto the grilled eggplant roll up and enjoy!
