Ingredients
- ♡ 3 Tbls Extra Virgin olive oil
- ♡ 6 Finger Eggplants (sliced) or One Large Eggplant (diced)
- ♡ 1 Red Onion - Chopped
- ♡ ½ Tsp dried oregano
- ♡ 1 Garlic Clove - Crushed
- ♡ 1 Can Diced Tomatoes
- ♡ 2 Zucchini – Cut in half then sliced
- ♡ ¼ Cup Flat-Leaf Parsley – Chopped
- ♡ Couscous to serve
Instructions
- ♥ Heat oil in a large pan, add the eggplant and stir fry until it changes colour.
- ♥ Add onion, reduce heat and continue stir frying until onion is translucent.
- ♥ Add oregano and garlic stir fry until aromatic.
- ♥ Add chopped tomatoes and simmer for 10 minutes.
- ♥ Add Zucchini and cook until zucchini is tender..
- ♥ Stir through parsley, season to taste and serve with couscous.
