Ingredients
- ♡ 1.5 tablespoons coconut oil
- ♡ 1 large onion - diced
- ♡ 500g frozen cauliflower
- ♡ 1 tablespoon Masala curry powder
- ♡ 2 medium tomatoes – peeled and diced
- ♡ 1.5 cups frozen peas
- ♡ Salt, to taste
- ♡ 2 Tablespoon coriander leaves – washed
- ♡ To serve: steamed rice.
Instructions
- ♥ Heat the oil in a pan (with a lid) over medium heat and stir fry onion until translucent.
- ♥ Add cauliflower and stir fry for a few minutes, then add masala curry powder and stir fry until aromatic.
- ♥ Add tomatoes and stir fry for a few minutes, reduce heat and simmer with a lid on the pan until cauliflower is almost cooked and then add the peas.
- ♥ Stir and continue to cook until the peas and cauliflower are cooked. Add water if it is getting dry. Season to taste and stir through the coriander cook for 1- 2 minutes.
- ♥ Serve with rice and enjoy!
