Ingredients
- ♡ 8 Cups Steamed Broccoli Florets
- ♡ 3 Large Potatoes – Peeled and Boiled Until Tender.
- ♡ ¼ Cup Parmesan Cheese - Grated
- ♡ Seasoning: Salt and Pepper
- ♡ Extra Virgin Olive Oil
- ♡ Serve With Yogurt Garlic Dip.
Instructions
- ♥ Preheat oven to 200ºC.
- ♥ Place the broccoli into a food processor and blend until it’s in very small pieces, squeeze out any excess water and place in a large mixing bowl.
- ♥ Grate potatoes on the large side of a box grater and place in the bowl with the broccoli. Add cheese and season with salt and pepper.
- ♥ Mix very well so the potato hold the mixture together.
- ♥ Line a large baking tray with parchment paper. Use your hands to form small round discs with the mixture. Use about 1 tablespoon per broccoli bite. Place the baking sheet in the freezer for about 10 minutes to allow them to firm up.
- ♥ Brush the top of each broccoli bite with oil. Bake broccoli bites until browned a crispy, about 30-40 minutes, flipping halfway though.
