Ingredients
- ♡ 2/3 cup quinoa, soaked overnight, then rinsed
- ♡ 1 cup water
- ♡ 2 cups broccoli, chopped
- ♡ 1 cups cheddar cheese, grated
- ♡ 2 eggs, lightly beaten
- ♡ 1 Tbls grainy mustard
- ♡ salt, pepper and cayenne to taste
Instructions
- ♥ Bring the quinoa and water to a boil, reduce the heat, simmer until tender and the water has been absorbed, about 20 minutes and let cool.
- ♥ Pre-heat oven to 350F/180C
- ♥ Mix all the ingredients in a bowl and spoon into 12 hole muffin pan
- ♥ Bake until lightly golden brown on top, about 15-20 minutes.
