Ingredients
- ♡ 2 Large Beetroot bulbs
- ♡ 8 - 10 thin slices Feta cheese (will vary depending on the size of the beetroot)
Instructions
- ♥ Wash beetroot bulbs and place them in a pot of cold water.
- ♥ Bring to boil and cook until beetroot is just tender. To check, a sharp knife will easily push through the beetroot.
- ♥ Leave to cool in the pot or overnight in the fridge.
- ♥ Using gloves, rub off the outer skin and slice the beetroot into thin slices.
- ♥ Layer the beetroot slices with cheese, starting and ending with the beetroot.
- ♥ You can square off the sides for presentation, and serve with a green salad but in my home they rarely get to the table after assembly!
