Ingredients
- ♡ 2 Tablespoons Extra-Virgin Olive Oil
- ♡ 2 Celery Sticks- Sliced
- ♡ 1 Large Carrot- Sliced
- ♡ 1 Small Onion- Chopped
- ♡ 4 Cups Vegetable Stock
- ♡ ½ Cup Broken Up Spaghetti
- ♡ Small Handful Fresh Parsley Leaves - Chopped
- ♡ 1 Tablespoon Lemon Juice.
- ♡ To Serve: Crusty Bread.
Instructions
- ♥ Heat the olive oil in a medium saucepan over medium heat; add all the vegetables stir fry until soft.
- ♥ Add stock and bring to the boil, and boil for about 5 minutes.
- ♥ Add the pasta and cook until pasta is just tender.
- ♥ Stir in parsley and lemon juice. Season with salt and pepper.
- ♥ Serve with crusty bread and enjoy!
