Ingredients
- ♡ 3-4 Vine Ripe Tomatoes – Washed
- ♡ 1 Tablespoon Massel Vegetable Stock Powder
- ♡ 2 Carrots – Halved And Sliced
- ♡ 1-2 Celery Sticks - Sliced
- ♡ 1- 2 Potatoes – Diced
- ♡ ½ Capsicum - Diced
- ♡ 200g Green Beans – Chopped
- ♡ 1 Can Cannellini Beans – Rinsed And Drained
- ♡ ¼ Cup Fresh Parsley - Chopped
- ♡ 2 Tablespoons Extra Virgin Olive Oil
- ♡ Season with salt and pepper to taste
Instructions
- ♥ In a stockpot bring 1.5 litres of water to the boil add the whole tomatoes. Boil until the tomato skins begin to come off.
- ♥ Remove each tomato and remove the skin chop and put them back into the boiling water and add the stock powder.
- ♥ Add; carrots, celery and potatoes and boil for 5 minutes. Then add the capsicum and green beans cook until the vegetables are just cooked.
- ♥ Add the cannellini beans and stir through the parsley bring back to a simmer stir through the oil.
- ♥ Season with salt and pepper to taste and serve hot.
