Ingredients
- ♡ 2 Tablespoons Extra Virgin Olive Oil
- ♡ 1 Onion – Chopped
- ♡ 1 Swede (Rutabaga) – Chopped In Cubes
- ♡ 1 Celery Stalk – Chopped In Cubes
- ♡ 1 Carrot - Chopped In Cubes
- ♡ 1 Lire Vegetable Stock
- ♡ 1 Large Tomato – Chopped
- ♡ 2 Bay Leaves
- ♡ 1 Tablespoon Basil Leaves – Finely Chopped
- ♡ 1 (400g) Can Mixed Beans - Drained & Rinsed
Instructions
- ♥ Heat the olive oil in a large sauce pan over medium high heat. Add onion swede, celery, carrots. Saute for about 10 minutes until the vegetables soften.
- ♥ Add the vegetable stock, tomato and bay leaves bring to the boil, reduce heat and simmer for 15 minutes, add basil, stir through beans and cook until heated through.
- ♥ Season with salt and pepper and serve hot with some crusty multigrain bread. Yum!
