Ingredients
- ♡ 1 Cup White Quinoa - Rinsed
- ♡ 100g Haloumi - Grated
- ♡ 2 Tablespoons Sliced Kalamata Olives- Chopped
- ♡ 1⁄3 Cup Flat-Leaf Parsley – Chopped
- ♡ 2 Spring Onions (Shallots) - Chopped
- ♡ ¼ Cup Mint - Chopped
- ♡ 2 Eggs - Lightly Whisked
- ♡ 1⁄3 Cup Multigrain Breadcrumbs
- ♡ 2 Tablespoons Canola Oil
Instructions
- ♥ Cook the quinoa following packet directions. Drain and transfer to a heatproof bowl. Set aside for 15 mins to cool.
- ♥ Add the grated haloumi, kalamata olives, parsley, onion, mint, egg and breadcrumbs to quinoa. Season with pepper. Stir to combine. Divide into 4 portions and shape each portion into a patty. Place on a plate in the fridge for 20 mins to chill.
- ♥ Heat oil in a frying pan over medium heat. Cook patties for 3 mins each side or until golden and cooked through.
