Ingredients
- ♡ 2 Tbls Extra Virgin Olive Oil
- ♡ 1 Onion – diced
- ♡ 2 Celery Sticks – chopped
- ♡ 1 Yellow Turnip (Swede) – chopped
- ♡ 1 ½ Cups Dried Green Split Peas – washed until water runs clear.
- ♡ 1 Litre Vegetable Stock
- ♡ 2 Bay Leaves
Instructions
- ♥ Add olive oil to a stock pot and add, onion celery and Swede stir fry until the vegetables are soft.
- ♥ Add the drained split peas, vegetable stock, and bay leaves bring to the boil.
- ♥ Reduce heat and simmer for 45 min – 1 hour or until the split peas are soft. Add extra water if too dry.
- ♥ Season with salt and pepper to taste and serve with crusty bread.
