Ingredients
- ♡ 6 Medium zucchini sliced ½ cm thick
- ♡ 1 Onion & 3 Carrots Chopped
- ♡ 1 Can chopped tomatoes + 2 bay leaves
- ♡ 1 Cup short grain rice
- ♡ 2 x can bean mix rinsed
Instructions
- ♥ Grill zucchini using a sandwich press.
- ♥ Fry onion and carrots in a casserole dish.
- ♥ Add canned tomatoes and bay leaves simmer for 5 minutes. Add rice, stir in bean mix.
- ♥ Top with grilled zucchini and bake for 20 minutes at 200ºC
- ♥ Serve with salad
