Ingredients
- ♡ 2 Tbls Extra virgin olive oil
- ♡ 3 Small Eggplants
- ♡ 4 Medium Tomatoes
- ♡ 300g Mozzarella Cheese - grated
- ♡ Extra virgin olive oil (extra)
- ♡ ¼ cup Grated Parmesan Cheese
Instructions
- ♥ Preheat oven to 220°C. Line a baking pan with non-stick baking paper. Add the oil to the bottom.
- ♥ Cut eggplant in half then cut 1 cm slices starting about 2 cm from the narrrow part of the eggplant.
- ♥ Cut tomatoes in half and slice.
- ♥ Layer the tomatoes in between the eggplants to create a fan.
- ♥ Using about 50g of cheese per half eggplant, layer in between each tomato.
- ♥ Sprinkle with sea salt and drizzle with extra oil.
- ♥ Bake in the oven for about 45 minutes to an hour.
- ♥ Remove from oven and sprinkle with grated parmesan, season to taste
- ♥ Serve with salad of choice
