Ingredients
- ♡ 2 cups zucchini, grated (2 large)
- ♡ 1 large onion, grated
- ♡ 1 cup tasty cheese, grated
- ♡ Flour mix: ½ cup self raising flour, ½ cup wholegrain self raising flour, 1 tsp baking powder
- ♡ ½ cup of oil
- ♡ 5 eggs, lightly beaten
Instructions
- ♥ Preheat oven to 180º C.
- ♥ Grease and line a lamington tin (or similar).
- ♥ Combine zucchini, onion, flour mix, oil and eggs, mix well, season to taste.
- ♥ Pour mixture into a tin and bake 35-40 minutes until golden and set.
- ♥ Allow to cool slightly before cutting.
- ♥ Serve with salad.
- ♥ Salad: Mix grated carrot with baby salad leaves and drizzle with dressing of 2 Tbls balsamic vinegar, 1 Tbls Extra Virgin Olive oil and salt to taste.
