Ingredients
- ♡ 2 sheets frozen puff pastry
- ♡ ½ red pepper & 1 onion, chopped
- ♡ 1 small sweet potato (2 cups diced)
- ♡ 1 cup frozen corn kernels
- ♡ 1 cup broccoli, chopped
- ♡ 2 eggs, lightly beaten
- ♡ ½ cup grated tasty cheese
- ♡ 2 Tbls each (butter & flour)
- ♡ 3/4 cup warm milk
- ♡ To serve: Salad of choice
Instructions
- ♥ Line a spring form 20cm cake tin with pastry. Freeze overnight.
- Preheat oven to 220ºC
- ♥ Heat 2 Tbls oil & fry onion, add pepper, sweet potato, Broccoli, ¼ cup water cover & cook until just tender. Remove from heat and add frozen corn, cool, stir in eggs & cheese.
- ♥ Melt butter in a saucepan. Add flour, fry 1 min. Add milk whisk until thickened, cool slightly.
- ♥ Add to vegetables & mix to combine.
- ♥ Remove prepared tin from freezer. Add the vegetable mixture.
- ♥ Cut remaining pastry in strips, top pie in a lattice pattern. Bake for 30 minutes or until golden & set.
