Ingredients
- ♡ 1 Onion – Chopped
- ♡ 1 Red Capsicum – Diced
- ♡ 2 Celery Sticks – Sliced
- ♡ 1 ½ Taco Seasoning (See Below)
- ♡ 2 Tomatoes – Diced
- ♡ 1 Large Zucchini – Diced
- ♡ 1 Cup Rice
- ♡ 2 Cups Vegetable Stock
- ♡ 2 Cans Of Mixed Beans – Rinse And Drain
- ♡ 1 Cup Tasty Cheese – Grated
- Taco Seasoning: Mix the below ingredients in a bowl:
- ♡ 1 Clove Garlic – Crushed
- ♡ 1 Teaspoons Oregano
- ♡ 2 Teaspoons Ground Cumin
- ♡ 2 Teaspoons Paprika
- ♡ 1 Teaspoon Ground Chili
Instructions
- ♥ Pre- heat oven to 200° C
- ♥ Using a flame proof oven pan, fry the onion until translucent. Add capsicum and celery and stir fry for 2 minutes.
- ♥ Add the taco seasoning and stir fry. Add tomatoes, zucchini and rice stir fry until the rice is coated.
- ♥ Add half the vegetable stock and stir until almost evaporated, add the remaining stock and beans, then stir to combine.
- ♥ Remove from heat and cover with aluminium foil and bake in an oven for 20 minutes and then remove the foil and top with cheese. Return to the oven and bake for a few more minutes or until the rice is cooked.
- ♥ Serve with green salad and enjoy.
