Ingredients
- ♡ 1 Tablespoon Extra Virgin Olive Oil
- ♡ 1 Brown Onion - Chopped
- ♡ 1 Bunch Celery Stick – Washed Trimmed and Chopped
- ♡ 500g Potato – Peel and Chop
- ♡ 1.5L Vegetable Stock
- ♡ ¾ Cup Cream
- ♡ Season with salt and pepper to taste
Instructions
- ♥ In large pot, heat oil, fry onion until it starts to soften.
- ♥ Add celery and potatoes and fry on low heat for approximately 5 minutes.
- ♥ Add vegetable stock, salt and pepper. Turn up heat and bring to the boil.
- ♥ Reduce heat, cover and simmer for 30 minutes or until celery and potatoes are cooked.
- ♥ Blend with a stick blender, then add cream and stir well.
- ♥ Serve with crusty rolls.
