Ingredients
- ♡ 2 Teaspoons Cumin Powder
- ♡ 1 Teaspoon Turmeric Powder
- ♡ 1 Teaspoon Chilli Powder
- ♡ 2 Teaspoons Garam Masala
- ♡ 1 Teaspoon Coriander Powder
- ♡ 1 ½ Fresh Ginger – Grated
- ♡ 1 Clove Garlic - Crushed
- ♡ 2 Tablespoons Cold Pressed Coconut Oil
- ♡ 1 Large Onion - Finely Chopped
- ♡ 4 Medium Potatoes - Peeled And Cubed (Approx 500g)
- ♡ 4 Tomatoes - Blended In A Food Processor
- ♡ 500g Frozen Cauliflower Florets
- ♡ ½ Cup Coconut Milk
Instructions
- ♥ In a small bowl mix together: Cumin, Turmeric, Chilli, Garam Masala, Coriander, Ginger, Garlic. Set the mixture aside.
- ♥ Use a heavy bottom pot heat the coconut oil. Add onions and stir fry until translucent. Add potatoes and stir fry for 3 to 4 minutes. Add the spice mixture and stir fry for 1-2 minutes.
- ♥ Add ½ cup of water, and the blended tomatoes, and salt to season mix well.
- ♥ Cover with a lid and let the potatoes cook for 5- 6 minutes. Then add frozen cauliflower and coconut milk simmer until the potatoes and cauliflower are tender.
- ♥ Serve with steamed rice and enjoy!
