Ingredients
- ♡ 3 Medium Zucchini - Cut In Batons
- ♡ 3 Eggs- Lightly Beaten
- ♡ 1 ½ Cups Breadcrumbs
- ♡ ⅓ Cup Parmesan - Grated
- ♡ Cooking Oil Spray
- ♡ To Serve: Garlic Aioli
Instructions
- ♥ Place zucchini in baking dish and salt. Cover and leave for about 1 hour. Squeeze out the water and pat dry.
- ♥ Place eggs in a large bowl. Combine breadcrumbs and parmesan a separate, bowl.
- ♥ Dip the zucchini into eggs, then coat in breadcrumb mixture, press the breadcrumbs firmly.
- ♥ Place in a single layer on two large oven trays lined with baking paper. Spray with cooking oil.
- ♥ Cook in a hot oven (200C), turning halfway through, for about 20 minutes or until fries are golden and crisp.
- ♥ Serve with aioli.
